    I remember back in the early 80's when Jack in the Box was embroiled in a big controversy with people saying that they were using kangaroo meat.

    Don't know if it was ever proven or not. But if they WERE then those were some damn good burgers.

    I went to this fancy restaurant a few years back. Each evening had it's own menu and you had 3 or 4 things to choose from.     that need to be culled. While they do allow deer hunting, they don't get
    rid of enough of them. Sometimes they will allow "extra" hunting but,
    usually, they wait until some disease starts killing a bunch of them.

    That is a lot of good meat that could have been used to feed people.

    my friend's dad used to hunt deer and then put a transponder on the carcass and the state would pick it up and butcher and give to families. i dont know if they still do that.

    Unless Deer are slaughtered and processed commercially, the only people Deer meat feeds are hunters and their neighbors. If someone gave me a piece of raw deer meat, I wouldn't even know what to do with it.

    :) We raised cattle, pigs and goats on my farm many years
    ago. All the animals had names. When any of them ended up on
    the dinner plate, it was no big deal to refer to them by name.
    The scenario was a little awkward when we had guests to join
    us for dinner. ;)

    he did it ONLY for that purpose. he would fielddress the deer and put the transponder on it.

    they have had many various programs since then and they've had all kinds of menthods.

    In my area, the border of the South and the Midwest, we have loads of deer that need to be culled. While they do allow deer hunting, they don't get rid of enough of them. Sometimes they will allow "extra" hunting but, usually, they wait until some disease starts killing a bunch of them.

    That is a lot of good meat that could have been used to feed people.

    Down in Texas there are are so many wild higs, they hunt them en masse from helicopters. Non-profits such as Hogs with a Cause harvest the hogs, then process and pack the meat and distribute it to homeless shelters and anyone
    who would like to donate to their cause. Their biggest problem is becoming lack of freezer space and fuel costs. They can only distribute a certain amount in an area before they end up bringing in more than they can ship out.

    Environment has alot to do with the flavor of venison. Meat from a buck will always be a bit more gamey than from a doe, and a diet of corn and beans will result in a different taste than acorns and berries. Corn and beans is less gamey. Venison is also very lean, and the silverskin and connective tissue between muscles holds most of that wild taste. If you grind meat into hamburger, fat is required to keep it from being dry and crumbly. Istead of using beef fat, my uncle would mix in ground bacon to act as a binder and flavor enhancer.

    Unlike beef, the fat is less desirable because ti and the connective tissue have the gamey wild flavor. The cuts themseleves chopped up for chili or tenederloins taste great. A good marinade also helps.
