    How can I just set logging to not using journalctl and just write a text file of my choosing. Is that still possible?

    Assumnig you mean a *nix version of sbbs running as a daemon? Yes, it logs to syslog. Configure your syslog daemon to write the log message from sbbs to whatever text file you want.
