I found several manuals for G3s and G4s that contain this:
"Your Macintosh has four expansion slots, each of which accepts a PCI
card up to 12 inches long. Install only expansion cards that come with Macintosh driver software and that comply with the PCI 2.1 standard."
It looks to me like PCI 2.0 is used with the Power Mac 9600, 8600, and
other series, and PCI 2.1 is used on several G3 and G4 systems. I can't
give you an exact answer, but I think it'd be safe to guess that the
entire G4 line supports PCI 2.1 cards.
If I've said anything wrong, someone please correct me! I don't want to misguide anyone.
