System and user libraries. Do useless files also get transferred into
the new computer or is TimeMachine able to sort out the unnecessary
files.

1. Yes. Get an up-to-date backup of the iMac, and then you can use that
to set up her new machine.
2. The name of the machine is a "Mac Mini", not "MiniMac".
3. A regular USB 2.0 drive will work, but it will be very slow. Are you actually sure your drive is USB 2.0? Because USB 3 first became
available in 2010.
4. Regardless, you don't need to connect your USB drive to the Mac Mini
via Thunderbolt, as there are two USB Type-A ports on the M1 Mac Minis
which support USB 3 and are (of course) backwards compatible.
