I know iPhoto is deprecated. But question nonetheless:

Say I have a .MOV movie in iPhoto which I wish to edit/colour corest in
    say After Effect/Premiere.

It there a way to store the corrected file a a "Modified" file within
the iPhoto database instead of overwriting the original ?

Not, it s not deprecated, it is EOL and discontinued. Deprecated has a
specific meaning that I am sure you WISH were true, but it is not.

Same reason I am probably... prefer the features and the UI, and can't
be bothered with the process of converting and verifying 20 years' worth
    of photos.

the 'process of converting' is automatic and requires no effort beyond
    simply launching its replacement, photos.

Trusting 20 years of photos to an unsupported product that hasn't seen
updates in ears, on the other hand, seems perfectly reasonable.

Converting iPhoto to Photos is trivial.
