I was able to reproduce this by making my own 7z file from a WAV file
that I converted from a MP3 with Audacity.
I uploaded it to http://zimage.com/~ant/temp/MP3toWAVsample.7z (38.3
MB). Please try extracting with mac OS Big Sur v11.4's Archive Utility
app and playing its WAV file.

What did you use to create it? Are any specific options set in that app
for 7z archives?
I just right click on the file in Windows Explorer and its defaults with
the 64-bit 7-Zip program from https://www.7-zip.org. I tried add to
archive manually with its options (https://justpaste.it/img/69bd8aa11a51f92afa0b0d57ded0a00d.gif). Both
were in my over decade old, updated 64-bit W7 HPE SP1 PC.

On both of these systems:
* macOS 10.15.7 (Catalina)
* macOS 11.2.3 (Big Sur)
Archive Utility: archive gets extracted but is not a proper WAV file
and cannot be played.
The Unarchiver: archive gets correctly extracted and can be played.
Thank you for reproducing it on your end. :) Wow, even Catalina. BTW,
how come you're not on v11.4 for Big Sur?
