• Backup for iCloud?

Recently I started working with Affinnity apps and Scrivener which have
iPad versions and share files with the Mac by putting them on iCloud.

I assume these shared files are backed up via Time Machine. If I gimp a document and want to fetch it back from last week, how do I do that?

Looks like it gets backed up to me. Try viewing the iCloud Drive folder
on your Mac and then choosing "Enter Time Machine" from the menu bar at
the top of the screen. You should be able to walk back in time to see
    each change you've made.
